I recently watched this show for the first time and I was really impressed by a recipe that I tried at home.
Being a vegetarian I replaced the chorizo for black beans as suggested by the TV host Olivia Andrews, and the Parmesan for Vegan mozzarella.
The recipe turned out amazing!
The fresh corn gave the meal a nice tasty touch.
A recipe I will definitely keep and use again in future.
